Aspiring cook

I was hesitant to join the taste of home community because, well, I really don't cook. Between my kids' extra finicky taste buds, my husband's dietary preferences and restrictions, and my full time job, well I don't have much time and really see the point of trying to cook. I just end up frustrated that I wasted a lot of time and energy shopping for, preparing and cleaning up after a mean that only I end up eating. Well, actually end up eating for days on end b/c there's tons of leftovers. I always wanted to be one of those mom's who could whip up anything and enjoyed cooking, but I'm not. And that makes me sad. Maybe some day? Until then I'll just consider myself an aspiring cook - I'd like to some day cook but until then, I'll only dabble in it when a burst of motivation and defiance for my situation takes over.
