Mmmmm....tis the season for Gingerbread

Today is the Taste of Home editorial potluck and ornament exchange. As you might imagine, food related activities at TOH are in mass abundance. Holy Catz, how many potlucks can a single girl prepare for?! Well, I cheated this time. I resorted to my all-time favorite place, TRADER JOES. They have an awesome Gingerbread Baking Mix; something along the lines of that Jiffy cake mix you can find in the “boring” grocery stores. It is FAN-FREAKIN-TASTIC. So, naturally, I made cupcakes! Afterall, I AM the milwaukee cupcake queen. Then I had to devise a frosting that didn’t make me gag. I find almost every frosting too sweet, too sticky and too heavy. Instead, I made a topping/frosting using a basic fluff recipe. It is really simple. Just mix together a defrosted 12 oz. container of cool whip, two boxes of instant vanilla pudding and a cup and a half of milk. Refrigerate over night and then “frost” the cupcakes just before serving. On a side note, room temperature cupcakes are MUCH yummier than cold fridge cupcakes.
