Old Fashioned Pot Roast -- left overs Roast Beef Sandwiches with Horseradish Sauce


Old Fashioned Pot Roast
Makes about 6 servings

1 (6-pound) beef sirloin roast
1 tablespoon kosher salt
1 tablespoon ground black pepper
6 cloves garlic, peeled
1 cup beef broth
1 (16 oz) package baby carrots
1 (1 pound) package fingerling potatoes, cut horizontally in half
1 large yellow onion, cut into eighths

1 a 6-quart electric slow cooker, add roast. Sprinkle evenly with salt and pepper; add garlic and beef broth. Cover, and cook on low for 6 hours. Add carrots, potatoes, and onion. Cook for two hours longer
 
Save 3 cups for tomorrow! ;)
 
Rost Beef Sandwiches w/Horseradish Sauce
 
Some nice onion or garlic and chedder buns (5 or 6)
! (5 ounce) baby arugula
3 cups warmed pot roast
hHorseradish sauce, recipe below
 
Layer arugula and 1/2 cup warm pot roast -- top each one w/desired amount of sauce and cover w/top. My Mother RAVES about this one!
 
 
 

Horseradish Sauce
makes about 1/2 cup
Mix together, serve with Roast Beef sandwiches, the best!

    * 1/2 cup low-fat sour cream
    * 3 tablespoons prepared horseradish
    * 1 teaspoon worcestershire sauce
    * 1 teaspoon hot pepper sauce
    * 1 garlic clove, minced
      1/4 teaspoon salt
      1/4 teaspoon ground black pepper

 

Mix together and serve with Roast Beef, wonderful!

Both of my grandmas used the old fashioned cookstoves. Their breads were wonderful. I can still see the big canners on the stoves during garden season. sf

I learned to cook on a wood stove from my Mother--we had a wheat farm in Colorado. Mother (now 93) and I cooked 3 meals a day for the harvest hands, from scratch, took lunch to the fields--she would dish out food while I drove the combines--Mother turned all holiday cooking when I turned 14.
