’Tis the Season…

September and October—two months that usher in the beautiful fall colors. But then there’s November. Brrrrr, it brings chilly temperatures, snow…and the cold-and-flu season. From the soft sniffles to the “I want to crawl back under the covers and sleep” aches and pains—there’s no telling how those flu bugs will hit. We’ve all been there, and we all treat illnesses in our own way.

In our family, we fight off our symptoms with a big pot of homemade chicken soup or a rib-sticking casserole. It always warms us up and makes us feel all better—or as close as we can get! Below are two of my family’s favorite recipes when we need to be pampered.


Chick-n-Rice Soup recipe is fast and easy! It can be ready in 30 minutes from start to finish. And Chicken Vegetable Casserole takes less than an hour to prepare and bake. Both are warm and delicious, two ingredients you need when you feel a little under the weather.


If you have a favorite cold-fighting recipe you’d like to share, please let me know. I hope not to need it, but I’d love to know about it…just in case!

You are correct, Marilyn.  Nothing says comfort like homemade soups and casseroles.  I especially love the dishes that cook all day long and fill the house with their wonderful aromas!  Your two recipes sound delicious and I cannot wait to try them.  The following recipe is also a favorite comfort food in our house:

Cheesy Mac 'N' Cheese

12 oz uncooked elbow macaroni

1/3 C sour cream

1 - 14 oz can diced tomatoes, drained (optional)

1 - 12 oz can evaporated fat-free milk or

     1 1/2 C nonfat milk

4 oz (1 C) cheddar cheese, shredded

2 t Dijon mustard

1/2 t ground black pepper

1/8 t ground nutmeg

2 T dry bread crumbs

2 T grated Parmesan cheese

Preheat oven to 350 degrees.

1. Cook pasta according to package directions.  Drain, reserving 1/3 C pasta water.  Transfer pasta to a large bowl.

2. While pasta is still hot, stir in sour cream, reserved pasta water and diced tomatoes.  Set aside.

3. Scald milk by heating in a medium saucepan over medium heat until tiny bubbles just appear around the edges.  Add cheese, mustard, pepper, and nutmeg.  Simmer, stirring constantly, until cheese melts.

4. Fold cheese mixture into pasta and transfer to a casserole dish (mixture will be thin but will thicken as it bakes).  

5. Mix together bread crumbs and Parmesan cheese.  Sprinkle over pasta.

6. Bake uncovered 20-25 minutes or until top is golden brown.

You can experiment with different kinds of cheeses and seasonings to suit your family's taste.  One thing is for sure, this dish will be a hit on a cold day!
