I have a similiar type of soup I make at least oonce a month through the fall and winter months. I call it Five-Bean Soup. Five different kinds of canned beans - baked, pinto, black, navy or great northern & red. To the beans I add a chopped onion, diced tomatoes and if a choose . . a meat - left-over ham, sliced Andoullie sausage or smoked pork chops. If I want alittle heat, I add a 4oz can of chopped jalapeno peppers or green chilies for flavor. A simple soup that always hits the spot. Dave

Cheesy Mac 'N' Cheese

12 oz uncooked elbow macaroni

1/3 C sour cream

1 - 14 oz can diced tomatoes, drained (optional)

1 - 12 oz can evaporated fat-free milk or

      1 1/2 C nonfat milk

4 oz (1 C) cheddar cheese, shredded

2 t Dijon mustard

1/2 t ground black pepper

1/8 t ground nutmeg

2 T dry bread crumbs

2 T grated Parmesan cheese

Preheat oven to 350 degrees.

1. Cook pasta according to package directions. Drain, reserving 1/3 C pasta water. Transfer pasta to a large bowl.

2. While pasta is still hot, stir in sour cream, reserved pasta water and diced tomatoes. Set aside.

3. Scald milk by heating in a medium saucepan over medium heat until tiny bubbles just appear around the edges. Add cheese, mustard, pepper, and nutmeg. Simmer, stirring constantly, until cheese melts.

4. Fold cheese mixture into pasta and transfer to a casserole dish (mixture will be thin but will thicken as it bakes).

5. Mix together bread crumbs and Parmesan cheese. Sprinkle over pasta.

6. Bake uncovered 20-25 minutes or until top is golden brown.

You can experiment with different kinds of cheeses and seasonings to suit your family's taste. One thing is for sure, this dish will be a hit on a cold day!

And those desserts look the same. Did you ever ask them what their favorite desserts were when they were kids...and make those? You might get some great recipes that way, too.

It is a great way for families to turn to do things on a monthly basis for gifts at holidays, also to do for seniors in our family as well as friends. It lets us keep in touch and remember those we care about every month, and gives them something to look forward to besides the bills!!
