I must have 50 recipes for macaroni and cheese, the ultimate comfort food, and I keep trying new ones, always finding one more way to bring a smile to my sister's face. I found this one on the Hellmann's Mayo website, made it last night, we loved it so I thought I would share it with you. Only four ingredients, giving you plenty of leeway to add your own touch, such as chopped ham, or some type of crunchy topping. It is excellent just as written.
1/2 cup Hellmann's (or Best Foods) original mayonnaise
1 1/2 cups shredded Cheddar cheese (divided)
3/4 cup milk
4 oz. elbow macaroni
Cook macaroni according to package directions. Preheat oven to 375°
Combine the mayo, 1 cup Cheddar and the milk in an 8" x 8" glass baking dish, add the drained and cooked macaroni, top with the remaining cheese. Bake for 30 minutes. Let stand for 5 minutes. Serves two main dishes, or four sides.
