Birdy asked for some suggestions on how to use some leftover turkey breast, and other than the usual turkey tetrazzini which we all know and love, here are a few ideas:
Hellmann's Fiesta Turkey Salad
1/2 cup Hellmann's Mayo
1/2 cup prepared salsa
2 cups diced cooked turkey
4 slices bacon, cooked and crumbled
Tomato, onion, and/or black beans, optional
6 cups torn romaine lettuce leaves
Combine mayo and salsa, and tos with the remaining incredients before serving on a bed of lettuce
This might also be good as a wrap, with just a bit of the lettuce.

We like to make open face hot turkey and gravy sandwiches with sauted mushrooms.
Turkey and Pasta Salad - just like one made with chicken (hard boiled eggs, celery, onion, chopped turkey, and one of the pastas like shells or rotini with your choice of salad dressing - I like a dressing made with a combo of mayo and blue cheese dressings.
Shepherd's Pie - turkey, mixed veggies, gravy, mashed potatoes baked in a casserole. Or a pot pie with a pastry crust (Bisquick recipe for Chicken Pot Pie).

Many don't like left overs but I think they are the best. The Shepherd's pie or pot pies are especially good with left overs.
My favorite breakfast is left over turkey, left over mashed potatoes, onion and eggs all fried together. My family always called it slumgulleun. MMM good!
