    Depending upon the recipe, you can usually substitute vinegars with pretty good success. There will be some difference in taste, perhaps, but the recipe will have the right chemical elements.

    If you don't have cider vinegar, white will probably work, as would a flavored vinegar (if the flavor will complement the other ingredients).

    The one thing you don't want to sub for other vinegars is balsamic--it has a very strong taste and a little goes a long way, so you wouldn't want to use all balsamic in place of an equal quantity of cider. Does that make sense?

    In some things lemon juice can be substituted for vinegar.

    If you have some apple juice or apple cider, why nottake a little of that, add some regular vinegar and taste until you thinkit resembles cider vinegar.
    Just a thought (I love to experim,ent)
