    I use a hot brine mix into packed jars. They always turn out soft or muschy. I run them at 5 Lbs. pressuer for 20 minutes. Any suggestions to correct this is appreciated.

    The Ball company publishes a book on canning - it may be at your local library. Or maybe online.
    When we put up pickles, we used a hot water bath, not pressure cooker. The addition of a little alum helped them stay crisp.

    The Presto Canning site says not to pressure can certain recipes. The list includes dill pickles, bacause the quality of the food will not be acceptable. I know that you are not supposed to can sauerkraut under pressure either.
