I am interested in making pepper jelly and sealing the jars with paraffin, but I've not done it. Can anyone give a quick explanation? thanks
Jan, I always melted the paraffin and poured on a thin layer. Then just swirl the jar a bit to seal the edges. Add another layer of wax to that and you are done. Learned that from my Grandmother.
That said, now I can my jellies with two piece lids. Much neater and easier. No more mold or seeping from paraffin leaks. You can also waterbath the preserves using this method and that keeps everything sterile and squeaky clean. Probably healthier too but the paraffin was pretty much all they had to use years ago.
