    I don't have red star sight, but I do wear bifocals.  I sm. cake = 1 packet.

    A 1 oz. cake of yeast is equal to 1 packet of dried. Remember not to use liquid  temps above 70 degrees. Cake yeast is live yeast and doesn't need to "wakened" like dry yeast. I wish I could find cake yeast. I think it gives a better rise and flavor. Hope this helped.

    Having grown up in a family bakery in Germany I know that compressed (cake) yeast tastes MUCH better than granulated yest. When I was growing up there was no dry yeast, bakers used compressed yeast for everything except dark bread and some specialty white bread. Specialty white and all dark breads were made with sourdough. The last time I was able to buy fresh yeast was back in the 1980s.

     I just went to Google a minute ago and typed in: finding compressed yeast cakes.

    Low and behold, there till are 3 or 4 places where you can buy it by mail order. I will contact them and find out if one can freeze it since it really does not keep very long  otherwise. No matter what, I am going to get some because I want to make an old fashioned yeast Bundt Cake, the same recipe my father and grandfather used in the bakery.And yeast pancakes.............(with chopped apples in them (YUMMY)
