Help! I made a lemon curd cheesecake for my husband's birthday & it didn't set. Any ideas why?
Recipe - the base is standard biscuit base
filling - 2 x 250g creamed cheese, 2/3 c castor sugar & 2 tbs lemon juice beaten, then add 3 teas dissolved cooled gelatine (3/4 c water) & then fold in 2 beaten egg whites & 2 c thickened whipped cream. Layer & swirl in 1/2 c curd. Put in fridge overnight. Looks like it sets until you cut it & then a (delicious) puddle!
I wonder if the gelatin was the problem. I made something last fall and it didn't set either- I'm positive it was the gelatin.
I make all my cheesecakes in a crock pot now, and it's so easy! Just use any glass baking pan that will fit in your crock pot, and pour 2 cups water in the insert of crock pot first, then add the dish with graham cracker crust and any recipe for cheese cake you want. Cook for 3 hours on Hi. Let it sit overnight in the frig. before serving. This is great for those hot days, when you don't want to heat up the oven! (The glass pan I use is just a bit big for my oval crock pot, so it sits above the water, but turns out great- I've made it in a pan that sits in the water too. The water bath should help it not to have those "cracks" in the cheesecake.)

I probably wasn't clear, it was a no-bake cheesecake. Funny, but I never have a problem with my baked ones. Thanks for the crock pot tip though. Robyn
I don't think the recipe you tried has enough gelatine in it for the amount of water used to dissolve it and the amount of cream added. I think you would need at least 2 tbsps for all that. At least it tasted good!
