How to Icing Cakes?

  • How to Icing Cakes?
    After I've cut the cakes down to the shape I want, I have problems icing the sides without the cake crumbling!

    I've tried freezing the cake first and still doesn't work well!

    Any tips or suggestions?

    Let the cake sit out over night before icing.

    first wipe the crumbs off the cake gently. Then lightly icing the cake. Don't worry if it has crumbs in it. Let the cake sit in a cool place for about 1 hour. Then add your thicker frosting.

    I use to make wedding cakes and cowgirl is right. A light icing first then the heaver frosting over it.

    It's called CRUMB COATING..

    A cold cake is much better to handle and ice. And use pastry brush to remove loose crumbs b4 crumb coating.
