well, worst case is you could freeze it and use it again the next time you want fajitas.
Can you chunk it up a bit and use it in a casserole? Add some sour cream, maybe some bow tie pasta, some jack or cheddar cheese, etc....
You could make pot pies with it too~just flavored differently.

Add it to a salad if it's cooked. Or stir fry it up and add it.
I make a egg omelet
I use it to make Mexican Hoagie Sandwiches (add warmed fajita meat to split hoagie buns & top with cheddar or pepper jack cheese in a 450 degree oven for a few minutes) or even Fajita pizzas. The cans of pizza dough make homemade pizzas easy to throw together. Use salsa instead of pizza sauce, Monterrey Jack cheese instead of mozzerella & when it comes out of the oven top it with shredded lettuce & diced tomatoes.
