What is the difference in Limes and Key Lime? When making a Key Lime pie and you use just bottled lime juice will there be a big difference in tast?
The key lime is a true type of lime with a distinctive flavor leaning on a bit of an orangey-lime flavor. They are really good and tart - just not as tart as regular limes. If you can find them, they are usually smaller than regular limes and pretty expensive. A true key lime pie would not be one without using the key lime - it would be just a lime pie - which would probably taste great any way!
BTW- I never use bottled lime juice (or lemon) unless it's from real lemons. Most of the stuff in the bottles is citric acid, water and lime flavoring.
Here in Arizona key limes go by the name Mexican limes. Many people grow them and usually they can be found in grocery stores. They are rounder and much smaller than a regular lime, turning yellow sometimes when very ripe. They have a fruitier flavor than regular limes. cj
