Found a recipe on site called "Pork Chops with Corn Dressing", but it calls for 2 cups of SOFT bread crumbs. What are those? Since this is recipe has a DRESSING...does that mean STUFFING? Should I be using an old loaf of bread crumbled up? Or do I grab my can of bread crumbs and use those....I use them for BREADING chicken and such. I'm confused.

As stated above, soft bread crumbs would be made from fresh bread. However, if you don't mind a textural difference, you can sub dry bread crumbs if you prefer. I've done the sub both ways, and you will get an edible, but slightly different result.
