Cut Out Cookies

    How do I keep cut out cookies from losing their shape while baking?  My cookies tend to "grow" and lose their shape when in the oven.

    Some sugar cookie recipes are not up to par. This is a tried and true genearational sugar cookie recipe I use when I am in the mood for sugar cookies.
    sour cream sugar cookies
    1 cup butter, softened
    1-1/2 cups sugar
    3 eggs
    1 cup (8 ounces) sour cream
    2 tespoons vanilla
    2 teaspoons baking powder
    1 teaspoon soda
    3 1/2 cups flour

    Frosting:

    1/3 cup butter, softened or shortening
    2 cups powdered sugar
    2 to 3 tablespons milk or water
    1 1/2 teaspoons vanilla
    1/4 teaspoon salt

    In a mixing bowl, cream butter and sugar. Beat in eggs. Add sour cream and vanilla; mix well. Combine flour, baking powder and baking soda; add to creamed mixture and mix well. Chill dough at least 2 hours or overnight. Roll on heavily floured board to 1/4 inch thickness. Cut with a 3'inch cutter. (Little hands can help make these thin or thick, it all works the same, just depending on how you prefer the thickness of the cookie) Place on lightly greased cookie sheet or parchment paper on a cookie sheet.. Bake at 350 degrees for 10-12 mins. or until cookie springs back when touched lightly. Cool; mix all frosting ingredients until smooth; spread over cookies or decorate the cookies how desired.
     
    I like to even dust the sugar cookies after they are on the cookie sheet with a little bit of dry jello. Makes a nice flavorable cookie.
     
    I have also frozen the cookies iced. Blues, black, and red coloring can fade at times when frozen. I freeze the cookies lined between wax paper in a sealed container. Tastes fine, just take the cookie out of the freezer and lay on your serving plate of cookies.  I learned this working the professional bakeries, they freeze their decorated cookies, and use them when needed.

    I know what you mean- I have the same problem. However, I have found that baking the cookies in the lower part results in cookies that do not grow a lot as opposed to ones baked in the top part of the oven. It doesn't eliminate the problem altogether but should help reduce it. Hope I helped and good luck with your cookies!
