    I do this, but I wrap each ear in a wet paper towel before microwaving.  Oh so quick and good

    What juicy corn on the cob in minutes! The husk and corn comes off so easy after cooking.  AND, keeps the kitchen cooler in the summer.  Smile

    MICROWAVED CORN ON THE COB from my mother-in-law

    Place UN-husked corn on the cob on a paper towel. Turn ears over and rearrange after 1/2 the cooking time.

    Cooking Times on High:
    1 ear - 1-1/2 minutes
    2 ears - 3-4 minutes
    3 ears - 5-6 minutes
    4 ears - 7-8 minutes
    5 ears - 8-9 minutes

    I put wet paper towels on things to microwave too- mainly baked potatoes.

    I have found so many hints/tips over the years. A good one for me is when I open a package of bacon (don't have to open it when you get home from the store because bacon lasts a long time if not opened)- just roll-up the unused slices and put them in a ziplock bag, then put in the freezer. You can take out how many slices you need, then cook so easily in microwave on a paper plate- you can keep the grease, if you want, or just throw the paper plate and paper towel that covered it- so convenient. Just cook each slice about a minute (maybe different for different powers of microwave ovens). If you cook 4 slices, you may only  need 3 1/2 min.- just have to check it.

    Several Shortcuts:

    1. When I make pie dough, I usually make more than needed.  I put them in zip lock bags and store in freezer.  You could roll out and put in wax paper, several layers thick and have pie shell all rolled out, or even put in pan and freeze and then store in large zip lock bag.  Then I know I can depend on this for a quick pie or quiche.
    2. I have grated carrots for my carrot cake when the carrots were plentiful in garden.  I now have enough carrots for two carrot cakes and it will taste really fresh.
    3. When I make a quiche for breakfast on Sunday morning, the shell is prebaked the night before, the bacon, ham, or sausage is cooked and put in zip lock bag, the cheese grated, egg mixture (cream and egg) in a jar, any vegetables either sauteed or just cut up (depends on which way you like your vegetables).  Store in fridge, in the morning put everything together.  I have even put all of the ingredients except for egg and cream in shell and get up shake the jar a few times and pour over ingredients.  What a time saver!
    4. Grate bread crumbs from old bread and store in freezer for a quick topping on casseroles.
    5. I made apple pie filling this year (sliced my apples, put in sugar and normal spices along with flour and added a little water) I precooked for about 10-15 minutes, then canned them in quart jars and processed for about one-half hour.  When it came time for a pie, I have my frozen pie shell, put in the apple pie filling (usually two quarts, unless you make turnovers), put a Dutch apple crust on top.  Quick deserts and wonderful flavors.  I think this is enough for now!

    This is really cheating on caramel corn, but I popped some the other night and wanted some caramel corn, but didn't  want the mess of cleaning up, so after I popped the corn (I still do it on the stove!) I put a dab of butter in the pan and added some caramel sauce that you put on ice cream and mixed until smooth and poured over the pop corn, added a little salt and it was as good as if I made the caramel sauce and baked the pop corn with the sauce.

    Whenever I go shopping, I immediately take all my leafy greens,especially head lettuce, to the sink and soak them in cold water to freshen them.  Then I store them in a glass bowl with a plastic wrap top, or a plastic bag folded into the bowl, making sure the top is fully covered.   I find my lettuce will keep fresher longer.  If you don't use it in a week ----soak it again.   Works wonders--I've sometimes kept a head of lettuce for a month, as I'm a single woman and can't use it up so fast.

    I love to cook and do so for my son and his family, often.

    I love making pancakes out of cake batter. The cake mixes come in so many flavors: butter pecan, strawberry, lemon, choclate, vanilla, banana, pineapple-you name it. Just mix according to package directions-may have to mix a tad extra water to make the batter thinner, and cook on griddle/pan as usual. Family loves this (a favorite is making choclate pancakes with  choclate chips in. Oh shudder, they're GOOOD!)

    This sounds so good!  Never thought of it.  Sometimes I buy the Jiffy brand of cake mix when it is on sale and these would be just right.  If we have company over the weekend will definitely try this.  Thanks for the great tip.

    When you're making brownies from a box mix, replace the water with cooled coffee. The coffee compliments the chocolate, giving the brownies a richer flavor.

    A tomato-based sauce make a good marinade (like bbq, or a spiced tomato sauce) because it has  a high acid factor, and that tenderizes meat well. A sauce with vinegar works well also, because vinegar is very acidic.
