Here's an easy summer potluck salad tip from a Taste of Home reader:
"To fix an extra-large batch of potato salad, I first mix all of the ingredients except the potatoes into the dressing. Then I stir a third of the potatoes with a third of the dressing and transfer that portion to a serving bowl. Repeat until all potatoes are coated. The potato slices stay intact since they're not overmixed."

Thank you Jessie. I often make potato salad for a crowd and it is very hard to keep from making mashed potato salad. You can bet I'll do it your way from now on!
I use to work in the food service industry.And I learned when making a large portion of say potato salad or macoroni salad. A trick to mixing it up evenly without mashing the potatoes .Is to wash your hands and ( if you prefer put on plastic gloves) and put your hands in to mix it.
