Separated Cheese Soup

    I made the Onion Cheese Soup recipe in the 2007 Daily Planner. The cheese separated when I added it. The soup was grainy instead of smooth. How do I fix it?

    The hot mixture was too hot when you added the cheese. Cheddar Cheese also doesn't melt and blend in very well. Try using Velvetta.

    The directions indicated I needed to bring it to a boil for two minutes and then add a a Colby/Monterey Jack mix. Is there anything I can do to fix the remainder of the soup I have? Will adding Velveeta to it make it smoother?

    I doubt it. But you should never bring it to a boil because as you already know it will cause it to seperate.
