I know the Ball Blue Book has a recipe in it but I don't have a copy and have no way to get to the store right now (car in shop). Can someone please post that recipe for me?
I am at work now, if no one posts it in the meantime, I will put it on for you tonight when I get home. I have the one from the Ball book and one a friend of mine gave me.
10 pounds tomatoes (cored and quartered)
3 garlic cloves, minced
2 large onions, chopped
2 large carrots, cut into 1/2 inch slices
2 cup chopped celery
1/2 cup chopped green peppers
hot peppers to taste
1/4 cup sugar
1 tbs salt
1 tsp Worcestershire sauce
1/2 tsp pepper
Combine tomatoes, garlic, onions, carrots, celery and peppers in large pan. bring to boil, reduce heat and simmer until vegetables are tender. press mixture through food mill. return juice to pan, add sugar, salt, Worcestershire sauce and pepper. bring to boil. ladle into hot sterlized quart jars leaving 1/4 inch headspace. add 2 tbs lemon juice to each jar. adjust caps. process 40 minutes in boiling water bath. Approximately 7 quarts.
