Chopped Spinach

    Many recipes that include frozen chopped spinach ask that you drain the spinach, or squeeze it dry, before adding it to the recipe... One way to make the draining of the frozen spinach easier is to turn the package upside down, and using an ice pick, punch 15 to 20 holes in the bottom of the box, turn it back right side, and then as it defrosts the water will drain out.  You may need to squeeze it down a bit by using a fork, but the majority of the liquid will drain as it thaws.  Better than having a lot of the chopped spinach caught in the strainer or sieve....

    That's a great tip, Beema!  Thanks!  If you only need to add a small amount of spinach..as in a rice pilaf or soup, I find dehydrated spinach to be a great help.  It comes in pound packages (store it in one of those big cheese ball or pretzel containers) from www.sfherb.com   I also order dehydrated leeks and chives (in 8 ounce packages).  I mix the three to have readily on hand.

    Thanks for the tip! I hate those bits of spinach in the strainer. I'll have to try dehydrating my own spinach, since I have a dehydrator, I should use it. I already do other things, but I haven't tried spinach yet. I would guess it works like herbs, which I do quite a bit of.

    I tried cooking the frozen spinach in the microwave for about 2/3 of the time, then let it sit, to cool down. I just used my hand to sqeeze it dry, and it was perfect. I didn't have to take it out to thaw or anything.
