Chocolate cookies with Andes mints

    I have searched the bulletin board but am unable to locate a recipe for chocolate cookies with Andes mints melted on top. I found the surprise package cookies with the mints wrapped inside but they sound difficult. Please help me locate a recipe. Thanks for the help.

    Hi,

    I found these doing an internet search. Does this sound similar?

    Harriet's Chocolate Mint Cookies

    3/4 cup butter
    2 eggs
    1 1/2 cups. brown sugar
    2 1/2 cups flour
    2 tablespoons water
    1 1/4 teaspoons baking soda
    12 oz. chocolate chips
    1/2 teaspoon. salt
    Andes mint or cherry candies


    1. On low heat, melt butter, brown sugar & water - then add chocolate chips - stir until melted.

    2. Pour into bowl & let stand for 10 minutes.

    3. Beat 1 egg at a time at high speed into mixture.

    4. Reduce speed - add dry ingredients.

    5. Chill dough for 1 hour.

    6. Drop onto ungreased cookie sheet. Cook at 350 for 8 - 10 minutes.

    7. As soon as they come out of the oven put an Andes candy on top of cookie and swirl with a spoon or toothpick.

    8. Let cookies cool completely on foil or rack.

    Chocolate Mint Cookies


    These are addictive! Try them for your next holiday cookie exchange. Thanks to Suzanne from my May97 parenting list for contributing to my chocolate vice!

    Ingredients:
    3/4 cup butter or margarine
    1 1/2 cups brown sugar
    2 tablespoons water
    12 oz chocolate chips
    2 eggs
    2.5 cups flour
    1 1/4 teaspoons baking soda
    1/2 teaspoon salt
    1 package Andes Mints




    Directions:
    1. Preheat oven to 350F.

    2. In a large saucepan, heat butter, brown sugar and water until melted.

    3. Add chocolate chips to melted mixture. Stir and remove from heat when chocolate is melted.

    4. Pour into large bowl and let stand for 10 minutes. Add eggs and mix at high speed. Add flour, baking soda and salt. Refrigerate one hour.

    5. Line cookie sheets with foil. Make small balls and place on foil. Bake 10-13 minutes.

    6. Cut Andes Mints into thirds and place one on each cookie. Let melt and swirl to frost the surface of the cookies.

    Hi! I got this somewhere off the board (I think).

    SURPRISE PACKAGE COOKIES


    1 cup butter (no substitutes), softened
    1 cup sugar
    1/2 cup packed brown sugar 2 eggs
    1 teaspoon vanilla extract
    3 cups all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    65 mint Andes candies

    In a mixing bowl, cream butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture. Cover and refrigerate for 2 hours or until easy to handle. With floured hands, shape a tablespoonful of dough around 42 can-dies, forming rectangular cookies.

    Place 2 in. apart on greased baking sheets. Bake at 375° for 10-12 minutes or until edges are golden brown. Remove to wire racks to cool. In a micro-wave or saucepan, melt the remaining candies; drizzle over cookies. Yield: 3-1/2 dozen.


    An Idea:

    Place 2" apart on lightly greased cookie sheets and put a nut half on top of each cookie.

    Here is a recipe for cookies that I've made for years.  It's a variation on a theme...

     

    Devilishly Minty Chocolate Cookies

    1 pkg. Devils Food Cake mix
    1/3 C. vegetable oil
    2 eggs
    3/4 C. chocolate covered mint candies (Andes), coarsely chopped

    Preheat oven to 350º. Spray cookie sheet with non-stick spray.

    In large bowl, mix cake mix, oil and eggs. Beat with mixer 3 - 4 minutes until well blended. With a spoon, stir in coarsely chopped mint candies.

    Drop by teaspoonfuls on cookie sheet. Bake 9-11 minutes. Cool and store
    in airtight container.


    NOTE:  I've used mint chips in place of the Andes.  They were still good, but I like the Andes better.

    Peanut butter chips are good, too.  I haven't tried the cherry chips, but I think they'd work!
