Devilishly Minty Chocolate Cookies1 pkg. Devils Food Cake mix1/3 C. vegetable oil2 eggs3/4 C. chocolate covered mint candies (Andes), coarsely chopped
Preheat oven to 350º. Spray cookie sheet with non-stick spray.In large bowl, mix cake mix, oil and eggs. Beat with mixer 3 - 4 minutes until well blended. With a spoon, stir in coarsely chopped mint candies.Drop by teaspoonfuls on cookie sheet. Bake 9-11 minutes. Cool and storein airtight container.NOTE: I've used mint chips in place of the Andes. They were still good, but I like the Andes better.
Peanut butter chips are good, too. I haven't tried the cherry chips, but I think they'd work!
