I need a whopping batch of scrambled eggs

  • I need a whopping batch of scrambled eggs
    for Easter breakfast at church. I have the church's recipe, but it doesn't sound right to me. It calls for 6 dozen eggs, 4 1/2 cups milk, and a pound and a half of butter! I'm thinking that can't be the right amount for the butter. It is supposedly a recipe from a Nesco roaster, but the Nesco site doesn't have it. Anybody got any advice? We have to make 3 batches of it, since we will serve about 125 or more people. (BTW, you are all invited.)

    When you divvy (sp?) down the butter, there are 8 tablespoons in a stick, 4 sticks to a pound. That's 32 tablespoons. Plus 16 tablespoons for 1/2 pound and you have 48 tablespoons for 72 eggs. That makes it sound not so bad, right??????? That's like 3/4 tablespoon butter per egg. Let me know if that helps!

    There's a lot of old people in the congregation...I'd hate to have them all keel over from clogged arteries at once! LOL. I'm thinking we'll just cut back on the butter and gamble with that. (Yikes! Gambling in the church!)
