Hi Anniemo! I know this post is REALLY late, but perhaps you can use it for this coming holiday season. I wasn't on this site last year, or I would have replied then. Anyway, this is one of my very favorite fall cookies that I've been making for years. It's from an old cookbook given to me by my mom. This cookie is more like a little sponge cake, rather than crisp like most cookies, but the taste is outstanding.
PERFECT PERSIMMON COOKIES
1 C. sugar 1 tsp. salt
1/2 C. shortening 1/2 tsp. cinnamon
1 egg, beaten 1/8 tsp. ground cloves
1 tsp. baking soda 1/8 tsp. nutmeg
1 C. persimmon pulp 1 C. chopped nuts
2 C. plain flour
Cream 1/2 cup sugar with shortening. Mix remaining sugar with egg; add to creamed mixture. Dissolve soda in persimmon pulp; beat into sugar mixture. Combine dry ingredients; add to persimmon mixture. Mix in nuts. Drop from spoon onto baking sheet. Bake at 373 degrees for 10 to 15 minutes. Makes about 4 dozen, depending upon the size of the spoon you use.

Oh my gosh!!!!!!!!!!!! Hi Cammilla. Thank you soooooo much. I did get a recipe from a friend of a friend here where I live, however, the recipe isn't complete!!! She didn't finish it on the back of the card so not all ingredients is listed! So yes, this one is good and I will defintley try it this fall.
