I have a list of flavored sugars I'm going to try and make (vanilla, lemon, lime, orange, possibly ginger) - has anyone done this and how was the result? What flavors did you use?

Because I do a lot of German baking/cooking, I learned long ago to make my own Vanilla Sugar. I use it all the time-- and it's so easy to make!
I take app.10 lbs of sugar (I always use organic sugar, but white sugar works well too) and two vanilla beans. Place the sugar in a container that can be sealed air tight. Slice the two vanilla beans in half, length-wise, and insert these down into the sugar. Then seal the container and leave it untouched for app. 2 weeks. Use what you need when you need it, and the sugar kept in the air-tight container will keep quite a while.
I use the approximate proportion of 1 Tbsp vanilla sugar = 1 tsp vanilla. I use this in baked goods, for sweetening whipping cream, to sprinkle on top of fruit. It's very versatile!
