While technically not a holiday, i am hosting a brunch for my daughter's baptism this weekend. I was wondering if you could take a look at my menu and let me know if I am missing anything?

Cheesy hash brown casserole
Carmel banana pecan bread
Berries and cream parfait for a light dessert
Fresh assorted fruit
Maybe Bloody Mary bar... not sure yet

I think it sounds great and you haven't forgotten a thing!
This looks good. I would consider adding a breakfast meat (sausage or bacon) to accompany the French Toast Bake. In addition, include a vegetable. I think baby carrots with touch of butter, honey and tarragon should work.
Jill that sounds great! The prime rib seems out of place to me, but that's just my whacky brain thinking "prime rib for breakfast?" - a quiche of some sort might be nice, maybe something with sausage.
I found these sausage pinwheels - they're easy and could be made ahead.
I'd love the recipe for the Strawberry French toast! (and honestly, a blood mary isn't a bad idea this morning, LOL)

Found two recipes-- haven't tried either yet. Not sure which one to go with! Thanks for the pinwheel recipe!
*This recipe is best made the night before you plan on serving.
Butter a 9x13 baking dish. Tear half the bread into pieces and cover the bottom of the baking dish completely.
Blend softened cream cheese, 1/4 cup of sugar and 1 egg in a bowl. Spread evenly over top the challah bread pieces in the baking dish.
Next slice strawberries and cook in a saucepan over medium heat with 1/4 cup of sugar and the juice from half a lemon. Cook till strawberries are soft and juices begin to bubble, about 5 minutes. Remove from heat and let cool. Once cool, spread evenly on top of cream cheese layer.
Tear the remaining Challah bread into pieces and place on top of strawberries covering them completely.
Lastly mix milk, cream, and 1/2 cup of sugar in a bowl. One by one blend in 5 eggs. Fold in Bailey's Irish cream and evenly pour mixture over top of casserole. Sprinkle with cinnamon.
Cover and refrigerate for 6 hours or for best results, overnight.
Preheat oven to 350 degrees. Uncover casserole and bake for 45 minutes to an hour depending on how firm or soft you like your french toast. Drizzle with maple syrup and serve warm.
1 cup skim milk
1/4 cup fat free half and half
3 large eggs
2 tsp. pure vanilla extract
2 TBS. honey
1/4 tsp. ground cinnamon
pinch of salt
1/2 loaf day old French baguette, cubed ( approx. 4 cups)
4 oz. 1/3 reduced fat cream cheese, cubed
1 cup diced fresh strawberries
2 TBS. strawberry all fruit spread ( such as Smucker's simply fruit)
powdered sugar for dusting ( if desired)
1. Combine milk, half and half, eggs, vanilla honey, salt and cinnamon in a large bowl. Whip well with whisk to incorporate all the ingredients.
2. Gently combine the diced strawberries with the fruit spread in a small bowl.
3. Add the bread cubes to the egg mixture and stir to coat. Gently fold in the cream cheese cubes and the strawberry mixture. Pour into 8" x 8" glass baking dish that has been coated with cooking spray. Cover with foil and allow to sit in fridge for at least one hour or overnight.
4. Preheat oven to 350 degrees F. Bake casserole with foil cover on for 25 minutes. Remove foil cover and continue to bake for an additional 20 - 25 minutes or until set and golden brown. Garnish with extra fresh sliced strawberries and a dusting of powdered sugar, if desired. Allow to cool for 10 minutes, then cut into 6 servings.
This sausage recipe would go well with your brunch items.
Sausage and Apples

8 Golden Delicious apples, peeled and sliced
Brown the sausage in the microwave and drain. Into a 2-quart casserole dish, layer apples, sausage, apples, and sausage. Over each layer of sausage sprinkle a small amount of brown sugar and cinnamon. Bake for 45 minutes at 350 degrees, stirring several times.
(I use regular link sausages and brown them in a frying pan on the stovetop. If they are large, I cut them in half. )
