Is there a cream cheese substitute?

  • Is there a cream cheese substitute?
    There are so many dessert recipes out there that call for cream cheese. I hate the flavor of cream cheese and can taste even the smallest amount in a dessert. Is there something that can be used in place of cream cheese? I've tried the marshmellow creme but it was a mushhy mess (very sweet, but very mushy). Thank you to anyone who responds!!

    You could try mascarpone cheese. It's an italian cream cheese and it tastes somewhere between cream and butter. Usually it's about $3.99 for 8 oz. where I live, but it's worth every tasty cent. Hope this helps.

    I seem to remember seeing a 'lowfat' substitute for cream cheese that used yogurt. I think the yogurt was strained thru a coffee filter so that the moisture was a lot less. Didn't sound too appealing to me becuase I don't like yogurt, but it might work for you.

    Strain plain, vanilla or any flavor you fancy of yogurt through cheese cloth or use coffee filter, at least overnight. I like mine a little thicker, so I usually strain it at 24 hours. I put the filter in a container that has a lid (make sure there are a couple of inches free space below the filter) pour in the yogurt, add the lid, then stick it in the fridge. The longer you wait, the thicker it gets.

    I remember having a recipe for low-fat cheesecake where you put cottage cheese thru a food mill (nowadays probably a food processor).

    I agree about the marscapone cheese, though.

    dry curd cottage cheese is a possibility. not large curd-that would be more mess. dry curd is similar to ricotta in texture, maybe a little thicker. run thru food processor.
