I need 1/2 c. sour cream for a recipe and don't have any. I don't have any yogurt either. Is there some way to make sour cream? I know how to make buttermilk, but don't know if it's possible to make a substitution for sour cream.
Yes, there is. MANY years ago, I found this recipe in a newspaper, and have used it in place of sour cream in dips, toppings, and casseroles.
Here it is....
Cottage Cheese Sour Cream
2 tablespoons milk
1 tablespoon lemon juice
1 cup cottage cheese
1/4 teaspoon salt
Blend all ingredients in blender or food processor until smooth.

Plain Greek Yogurt is even better and smoother than the one made with cottage cheese.
The measurements make 1 cup so half them for your recipe.
For baking: 3/4 cup sour milk plus 1/3 cup butter.orFor baking: 3/4 cup buttermilk plus 1/3 cup butter.
For Cooked sauces: 1 cup evaporated milk plus 1 tablespoon vinegar or lemonjuice. Let stand 5 minutes to thicken.
Dips: 6 ounces cream cheese plus 3 tablespoons milk, briefly whirled in a blender.
Lower fat: 1 can chilled evaporated milk whipped with 1 teaspoon lemon juice
