A friend has given me some large pomegranates. Any suggestions about what to do with them? Thanks!

Funny you should ask! I just finished going through (first pass) the "Eating Well" December 2012, and I earmarked the Quinoa Salad with Oranges, Beets & Pomegranate! You can get it by going onto eatingwell.com and put pomegranate in the search box. This issue also shows you how to seed a pomegranate without making a mess!
"Fill a large bowl with water. Lightly score the fruit into quarters from crown to stem end, cutting just through the skin. Hold the fruit under water, break it apart, and use your hands to gently separate the plump seeds from the skin and white pith. Discard the white pith. Pour the seeds into a colander. Rinse and pat dry." (Eating Well, 12/2012, pg. 94)

I am probably too late- but you can toss the seeds in with a green salad- they are tart sweet, and will add a bit of crunch. They are super good for you. You can also crush them and use the juice to make jelly or add in a blender to a smoothie. If you do not like them- spray paint them gold and use on your holiday table decor
Here's a nice oats milkshake recipe with pomegranates. Blend 1 no. pomegranate seeds with 1/2 cup of roasted oats and 2 cups milk, adding little milk at a time till creamy. Add honey or sugar. For tastier version, you can add one scoop of vanilla icecream instead of milk.
