Nigella Lawson has a WONDERFUL lamb recipe where you slow cook the lamb and then shred it and you add mint and fresh pom seeds. I make it a couple of times a year, it is very easy.
The recipe is on both her personal website and the Food Network website and it is called "Warm Shredded Lamb with Mint and Pomegranate."
The seeds are also wonderful on a salad and I personally each one a day in season just on their own. It is my favorite fruit of all.
