    What type of capers are you referring to... brined or salted?  Brined capers can be stored far longer than salted capers.

    Capers are the flower buds of the wild mediterrainian nasturtium.

    When I was still gardening I sold nasturtium flowers to a chef who sprinkled them on salads, they taste a bit like cress.He also used borage-, chive-, Johnny-Jump-Up blossoms and tiny "currant" tomatoes (latter are not real tomatoes but the pea sized fruiits taste just like tomatoes and they are also in the same nightshade family as  potatoes are ).

    I like rose-hip tea, it tastes like very weak apple juice bevause roses and apples are also related.

    So many great things to e had from nature......
