I don't know about potato soup, but I make and freeze lots of broccoli soup when broccoli is in season, and it's made with cream. The soup separates a little when frozen, but once it's thawed and you dump in pot, just stir and the contents all blend back together as it heats.

    Here is what Jeeves said.

Yes, you can freeze cream-based soups>>>>
You might find that when you thaw and reheat that
cream soups sometimes will have a little different
consistancy than when freshly made but it is not a
problem unless you have a thick cream base.
Don't freeze for too long though- or you might lose
    some of the flavors.

Jeeves is correct.I owned a restaurant"Grandma's Kitchen" for 15 years and served all the soup and french you can eat for 4.95....Absolutely,yes, you can freeze soups of just about any kind. I really can't think of any soupd you can't freeze.I made 5-6 kinds of soupd EVERY DAY and many times made too much so I froze them for future use. Have a nice day, Liz AKA,"Grandma"
