  • Can I freeze fresh pecans?
Can freeze them in the shell or would I have to crack them first? How long will they last in the cupboard?

They won't last very long in a cabnit. The meat drys out and it can become buggy and wormy quick..
My suggestion is to definately put them in a freezer, in a zip-lock bag..I have done that for years and have always had success..

They'll keep for a long time in the freezer, in the shell or out.

You can certainly freeze them. I have kept them in the freezer for 2 years. I always shell them first and sometimes even chop a whole freezer bag so I can scoop them out for recipes when needed.
Not sure how long they will last in the cupboard.
    Here's something I found:
Table 1. Relative storage life of pecans held at various temperatures
    Temperature In-shell (Months)
    70°F 4
    47-50°F 9
    32-36°F 18
    20-25°F 20-40
    0°F 24-60

    Temp. shelled (months)
    70 3
    47-50 6
    32-36 12
    20-25 18-24
    0 24-60

the table didn't copy well, but the number after the temp. shows how many months you can store at each temp. in the shell and out.
