Mello Yello Cake
I made this over the weekend. It is very moist and yummy. I actually used Mountain Dew because I could not find a Mello Yello at the grocery store in the cold drinks and didn't want to buy a six-pack of them.
Mello Yello Cake
INGREDIENTS:
1-1/2 cups Crisco
3 cups plain flour
1 cup Mello Yello
1 teaspoon vanilla flavoring
1 teaspoon lemon flavoring
3 cups sugar
5 eggs
Let the eggs and Mello Yello sit out long enough to reach room temperature. Preheat the oven to 325 degrees. In a large mixing bowl, cream together the shortening and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the flour and Mello Yello alternately starting and ending with the flour. Add the flavorings. Pour into greased tube pan or bundt pan. Bake at 325 degress for 1-1/2 hours.

I don't think it needs anything on the top. Yes, you could leave out the lemon and it would still taste good. It seems to have lost it's lemon flavor after a couple of days. Odd, I know. Maybe I've just gotten used to the lemon flavor and am not noticing it

I have a variation from Ann Landers column, 20 yrs. ago! (July of '86.)
Hers calls for margarine, 1 tsp. vanilla, 1/2 tsp. lemon, 1/2 tsp. almond ext., & 7/8c. ginger ale or similar soda.
A cake with a nice hint of lemon flavor.
DS likes it best with a simple glaze icing.
