    Potato Casserole

    1 24 oz bag frozen shredded hashbrown potatoes*
    1 cup shredded Cheddar cheese
    1/2 cup green onions, sliced
    1/2 stick butter, melted
    salt and pepper to taste
    2 cups heavy whipping cream
    Paprika

    Combine potatoes, cheese, onions, butter, salt and pepper.
    Spread in baking dish lightly sprayed with Pam. Pour the cream over potatoes.

    Bake at 350 degrees for 45 minutes until lightly browned. Sprinkle with paprika.

    *If using whole potatoes, slice thinly and cut slices into very thin strips

    Missy Potatoes

    1 (2-lb.) package frozen hashbrowns, thawed
    1 (16-oz.) carton sour cream
    1 (10-3/4 oz.) can cream of celery soup
    1 cup shredded cheddar cheese
    1/2 cup butter, softened
    1 tsp. salt
    1 tsp. pepper
    1/2 cup bread crumbs

    Combine first 7 ingredients, spoon lightly into greased 13 x 9 x 2 baking dish. Sprinkle bread crumbs evenly over top.

    Bake at 350º for 40 minutes (maybe a little longer...sometimes the hashbrowns are still a little firm at 40 minutes). Yield: 10-12 servings

    (Added note: I like to serve this with chicken marsala, lime gelatin salad, green beans and bacon, and Italian cream cake. A great combiation.)

    Cracker Barrel Old Country Store Hash Brown Casserole

    Notes: This was the original recipe that we presented as our recipe. It uses a sour cream base for the binding agent.

    Ingredients:
    1 2 lb. pkg. frozen Hash Browns
    16 oz. Sour cream
    1 can cream of chicken soup
    1 stick butter
    1/2 C. Chopped onion
    2 C. grated Cheddar Cheese **personal note, I like sharp the best

    Preparation:
    Place potatoes in a greased 9x13 inch pan. Season with salt and pepper. Melt butter in the microwave. In a bowl add minced onions, sour cream, and cream of chicken soup, and melted butter. Mix these items together. Pour soup mixture over potatoes; sprinkle with Cheddar Cheese. Bake at 350 degrees for 45 minutes, or until all is completely warm, and the cheese begins to melt.

    Cracker Barrel Store Hash Brown Casserole II

    Notes: Vania submitted this recipe. The recipe suggests you use Crazy-Janes Mixed Up Salt, is this not available in all areas.

    Ingredients:
    1 bag frozen country style hash browns
    1/2 C. (or so) onion, chopped fine
    Jane's crazy mixed-up salt, to taste
    1 1/2 - 2 C. Colby cheese, shredded (I love cheese-- but in this case, more is not necessarily better)
    1 can cream of chicken soup

    Preparation:
    Cook hash browns, onions, and season to taste in a skillet. You will need to add a little butter or oil, cook until the hash browns are tender, and brown. Drain the hash browns and set aside. Then mix together cheese and cream of chicken soup in a separate bowl Add hash browns to mixture, then transfer into a buttered 2 qt. casserole dish and cook at 350 for 30 minutes or until golden brown.

    oh man, all of the above. If it were a buffet I would choose: Mac 'n cheese, greens, baked beans, cole slaw and to top it off a gooey dripping hunk of berry pie. LOL, I"M STARVING!!

    FRIED APPLES

    6 tart apples, sliced (I've used whatever apples I have)
    1/4 C. butter
    1/4 C. brown sugar
    1/8 t. salt (I omit)
    1 t. cinnamon
    a dash of nutmeg


    In a large skillet, melt butter. Pour apples evenly over skillet bottom.

    Sprinkle brown sugar, cinnamon, nutmeg and salt.
    Cover and cook over low heat for 15 minutes or until apples are tender.

    *I also add 1 teaspoon of cornstarch to thicken.
