    To peel or not peel zucchini?
    I have a recipe for zucchini whoopie pies,but it does not say whether or notto peel them before you grate them.Can anyone tell me what I should do? Thank you. Pat

    Most recipes do not call for the zucchini to be peeled. The only recipe that I know of that does is for a Custard type pie.

    Have never peeled zucchini-Have made many an Italian torta with grated unpeeled zucchini, finely chopped onions and eggs. Have made zucchini cake, never peeled!!!..Toni

    The only time I peel a zucchini is when I make relish. I use the larger zucchini for my relish.
