I picked one of my round zucchini's . Not sure about the size.

    The package said to pick them at 4 - 6 inches round. I think it is that. It took long enough. LOL

    Same here, Catmint. Mine seem to be slow to increase in size. They are about the size of quarters right now. Will wait patiently now to see if any get large enough to eat. :)

    Quarter size is perfect to thinly slice, saute and stuff into an omelet.

    For those in a great big hurry, You could always eat the blossom...Wink

     

    From about.com:

     

    Chopped zucchini blossoms and mild summer onions make a flavorful and easy rice pilaf. This side dish pairs nicely with simply cooked grilled or roasted chicken and almost any mildly flavored fish dish.

     

    Prep Time: 10 minutes

    Cook Time: 25 minutes

     

    Ingredients:

     

    • 1 Tbsp. butter
    • 1 small onion, finely chopped
    • 1/2 tsp. salt
    • 2 cloves garlic, minced (optional)
    • About 20 zucchini blossoms, roughly chopped
    • 1 cup long grain white rice
    • 2 cups broth
    • Chopped parsley (optional)
    • Feta, parmesan,or ricotta cheese (optional)

     

    Preparation:

     

    1.In a medium saucepan over medium heat, melt butter. Add onion and salt and cook, stirring occasionally, until onions are soft and translucent. Add garlic and zucchini blossoms, stir and cook until blossoms are tender to the bite.

     

    2.Add rice and cook, stirring, until rice grains are opaque. Add broth, bring to a boil, cover, reduce heat to simmer, and cook undisturbed for 15 minutes. Turn off heat but let rice sit for 5 minutes undisturbed. Uncover and fluff with a fork.

     

    3.Serve garnished with parsley and/or your choice of cheese, if you like.  Makes 4 to 6 servings of Zucchini Blossom Rice Pilaf.

     I grew one last year and have another this year.  Mine are still small.

    Thanks Alaska. I started to say, I'll look at it later, have to run, but, my printer printed it, for some reason. LOL!

     

    My zucchini isn't that green. Maybe I picked it too early? It hasn't the nice dark color.

    i've been picking zukes every day..this has been a good year for squash..i have a spaghetti squash growing..not sure when i should pick it..how big does it have to get..

    My crookneck squash is not doing too well. Looks like they are going to get bumpy very small.

     

    My Acorn squash  has blooms, no  squash yet.   And no butternut, but, I think they are a late one, so, not sure how they come on.

     

    My cucumbers have done horrible, too. The vines just dry up. I had nice ones last year.
