How do you make your million dollar pickles?

  • How do you make your million dollar pickles?

    I have never made them. But was thinking about trying this year to make them. It's been a family favorite of days of old  for several members of the family. I thought of trying my hand at making them this year to surprise some family members. How do you make them? And Can them? I have a full big canning kettle full of sliced cucumbers waiting. So start me there please...thanks...

    I have never made or eaten them but here's a recipe.

     

    Million Dollar Pickles

    "Tasty pickles that take some time, but are easy to make. One crunch and you'll agree they are worth the wait!"
    Ingredients:

    10 cucumber, sliced
    4 cups sliced onions
    1/3 cup pickling spice
    4 cups water
    2 teaspoons ground turmeric
    1 teaspoon celery seed
    6 cups white sugar
    2 quarts distilled white vinegar

    Directions:

    1. Place the cucumber, onions, pickling spice and water in a large bowl. Allow the mixture to stand 6 to 8 hours, or overnight.
    2. Drain liquid from mixture. In a large saucepan, mix the cucumber mixture, turmeric, celery seed and white sugar. Pour in the vinegar, adjusting the amount so that it covers the mixture. Bring to a boil. Transfer to sterile jars. Store in the refrigerator.

    Million Dollar Pickles
    Cucumbers are soaked overnight to make these extra crispy, extra tasty pickle chunks.

    • 2 dozen pickling cucumbers -- washed and sliced into thick chunks
    • 1/2 cup salt
    • 3 cups apple cider vinegar - 5% acidity
    • 2 cups water
    • 1 T. mustard seeds
    • 1 T. celery seed
    • 4 cups sugar
    • 2 cups brown sugar


    Preparation -
    Place the sliced pickles and salt in a large bowl and stir to mix well. Add enough water to cover the sliced cucumbers. Cover the bowl and let it stand overnight. The next morning, drain the cucumbers; set aside. Place the remaining ingredients in a stockpot and stir to mix well. Bring to a boil, and cook for about two minutes. Add the drained cucumbers, bring to a boil again, then remove from heat. Spoon the cucumbers, with the syrup, into into hot sterilized pint size canning jars. Pack the cumbers tightly in the jars with enough syrup to cover them completely, leaving 1/2" headspace. Run a thin spatula or non-metallic utensil through each jar to remove any air bubbles. Wipe the jar rims with a damp paper towel. Add the caps and bands. Place the filled jars in a boliing water bath canner and process for 10 minutes. (Start timing as soon as the water begins to boil.) Remove the jars from the canner at the end of the processing time, Cool, test the seals, label and store the jars in a dark, cool, dry area.

    Do you refrigerate the pickles overnight or can you leave them stand out on the counter with a cover over them?
