    Evaporated milk? I have a can that has a "best by" July 4th 06.
    Think I can still use it?

    I would use it...canned goods aren't as critical as frozen or fresh.

    I would open it up and if it doesn't smell bad or anything I would use it. It's only been a couple of months, and it's in a can.

    My sniffer doesn't work all that well, FryeGirl, so I have to rely on expiration dates.

    In any case, what time shall I be there for Dinner??? ;)

    If the can isn't bulging, I would use it. It may be slightly darker than normal.

    I'd be interested in the basics. What kind of cheese etc??

    I've become lazy & just use the quicker kinds lately & yours sounds interesting.

    The today show had a segment on this this weekend. Bottome line, the sell buy date is just a guideline that manufacturers have to put on. Canned stuff, medicine, and such are good long after the "sell by" date. On the other hand, "use by" is a different story.

    Renee, this is the recipe that got me started, I've always baked it, but I'm lazy today.

    Taste Of Home's Slow-Cooked Mac 'N' Cheese

    Ingredients:

    1 package (16 ounces) elbow macaroni
    1/2 cup stick margarine, melted
    2 eggs, beaten
    1 can (12 ounces) evaporated milk
    1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
    1 cup milk
    4 cups (16 ounces) shredded cheddar cheese, divided
    1/8 teaspoon paprika

    Cook macaroni according to package directions; drain. Place in a 5-qt. slow cooker; add margarine. In a bowl, combine the eggs, evaporated milk, soup, milk and 3 cups cheese. Pour over macaroni mixture; stir to combine. Cover and cook on low for 4 hours.

    Sprinkle with the remaining cheese. Cook 15 minutes longer or until cheese is melted. Sprinkle with paprika.

    Yield: 10 servings.
