  • breakfast casserole for 100
    Does anyone have the proportions for making the standard sausage/egg breakfast casserole for 100 people? (the one with bread, eggs, milk, sausage & cheese that sits overnight in the refrigerator)
    We have made these before at church, and I've lost the proportions...trying to save figuring them out again!

    wouldn't you just take the regular recipe and increase the ingredients accordingly?

    I would do that, except the recipe is in my head and when I make it for myself I just "wing it" Need some exact measurements for "cooking by committee.

    Sausage Egg Strata

    1 pound bulk pork sausage
    3 cups milk
    1 1/2 tsp Dry Mustard
    4 slices white bread cut into quarters
    9 eggs slightly beaten
    1/2 tsp salt
    1 1/2 Cups grated cheddar cheese

    Brown sausage, drain. Mix eggs, milk, mustard and salt. Stir in bread and sausage, then cheese. Pour into 9 x 13 pan, cover over night. Bake for 1 hour @ 350 degrees.

    I have had that recipe for awhile and I want to say it was for about 8 people? I never wrote down how many it fed.
