Mammaw--I've tried the one with red beans in it when we had Mexican food one night. It seemed a little spicy to me, but I'm sensitive to that...DH like it tho!

Yup use it as the base for my awesome feed the neighborhood dirty rice recipe. BTW, it's exactly the same as their jambalaya mix lol.
Dirty Rice5 cups water, chicken or beef broth2 packages Zatarain's Dirty Rice Mix*2 1/2 pounds ground round,3 bunches chopped green onions, with topsMinced garlic or garlic powder to tastesalt and pepper or cajun seasoning to taste1 small finely chopped green pepperCrushed red pepper to taste3 to 4 pounds spicy smoked sausageBring broth to a boil. Add dirty rice mix, stir; return to boil. Cover, reduce heat and simmer 20 minutes. Remove from heat and set aside for 20 minutes.Pour cooked rice mix into very large bowl.Brown ground round with onions, garlic, green pepper and crushed red pepper flakes and seasonings to taste. Do not drain.Cut sausage into 1/2 inch slices and then again in half or into quarters. Brown and drain.Mix all together in bowl with rice and let set at least 2 hours for flavors to blend in, then adjust seasonings to taste. Maybe reheated before serving if desired.Serve as main dish, side dish or party munchie with crackers and hot sauce.This fills a 2 gallon ziplock bag and freezes well.
This is what I'm gonna try...I'm browning chicken drumsticks and thighs (in the oven). I'll take them out an mix the rice and water according to directions. When it's just about done I'm going to add a can of kidney beans with the "juice", put the chicken back in and stick it in the oven.Whay do you think? Can this work?! LOL!

Footsie, there is a difference between dirty rice and jambayla. Dirty rice had equal parts of ground beef, ground chicken livers and ground pork. I always use 1/3# each --- but that is because i am only cooking a little.
