    Don't forget, you can convert your own favorite recipes to 'jar gifts'.  Use butter flavored Crisco in place of butter/margarine (cut it into the dry ingredients), add the appropriate amount of dry milk powder (1/3 cup for each cup of milk called for), use dry vanilla in place of extract.  Then just tell your recipient to add water and eggs, as needed.  I've made several of my own favorite recipes into mixes.  Muffins are especially nice, because you really do want your recipients to eat them fresh and hot from the oven.  I don't usually do cookie mixes because cookies keep beautifully for weeks, so I can bake any cookies I want to give and save the gift getter the trouble.
