    I had a recipe for sloppy joes with pineapple as an ingredient. It has disappeared with other recipes since I got the new computer. Does anyone have this recipe????? TIA

    Hello Charles!  I dont' know if you would consider this sloppy joes.  I personally think sloppy joes does not have beans.  But my DH thinks that sloppy joes and chilli are the same dish, served different ways (!!??)  So I did have this one on my computer, as DH had been looking for a recipe of chilli with pineapple.  Though this wasn't the exact one that he meant.

     

    Hawaiian Beef Casserole

     

    1lb ground beef (or link sausages, cut up)

    2 tbsp. apple cider vinegar

    1 med onion, chopped

    1 can baked beans

    Salt, garlic, parsley, and pepper to taste

    1 can kidney beans, drained

    1/2 cup ketchup

    1 can pineapple tidbits, with juice

    1/4 cup brown sugar

     

    Brown meat and onion; drain excess fat add seasonings.   Combine ketchup, brown sugar and vinegar and mix with meat mixuter.  Add beans and pineapple, with juice.  Pur into cesserole.  Bake at 350º for 40 minutes.  Serve with rice

     This sounds really good but you'd need to cut the recipe down...

    Tropical Sloppy Joes

    • 5 lb Ground Beef
    • 2 Green Pepper diced
    • 1 Big Onion (2 medium onions) diced
    • 2 Tomatoes diced
    • 1 oz Oregano
    • 1 Jalapeno seeded and diced
    • 1 cup Crushed Pineapple with Juice
    • 2 tbsp of Coco Lopez
    • 1 tbsp Black Pepper
    • 3 Bay Leaves
    • 1/2 gallon of Ketchup
    • 2 tbsp Fresh Garlic
    • 2 tbsp Salt
    • 1 oz Cilantro

     

    1. Sauté the ground beef until it is browned and drain the excess fat from the pan
    2. While the beef is browning dice the peppers, garlic, tomatoes, onion, and jalapenos into medium cubes and sauté in a separate pan until onions are slightly translucent.
    3. Combine the cooked veggies with the ground beef and add ketchup and seasonings.
    4. While the mixture is simmering add the Coco Lopez and pineapple.
    5. Let simmer and serve!

    LOL it's a brand of coconut milk, cream of coconut and (I think) pina colada mix
