Blueberry Coffee Cake...a tender coffee cake with homemade blueberry filling in the center of the cake. This was sooooo good! As I was making the cake batter it reminded me of a biscuit recipe. It was more a dough than a batter. The homemade blueberry filling was easy and came together very quickly. I used 2 cups of thawed and drained frozen blueberries. The nice thing about this cake is you can make it in several different homemade fruit fillings. The crumb topping added a nice crunch along with a little sweetness. This was also the perfect size for Paul and I as it was made in an 8x8 baking pan. You can also double the recipe and make it in a 13x9 inch baking pan.
