Mom3boys (Ellen's) Favorite Recipes-finally!!!
Okay, I'll try this again- I typed up 2 pages full & they disappeared-GRRR!!! That's after I wrestled my 3rd son for the computer!!!
Hope you all enjoy these recipes-you've had to wait long enough! LOL!
Ellen
This sounds too easy to be good, but it is a favorite of ours!
Olive Dip
(Mom3boys)
1 8 oz. cream cheese, softened
1 4 oz. can chopped black olives
3-4 green onions, thinly sliced
Combine all ingredients with an electric beater till well blended.
Serve with Garlic Bagel Chips.
Big hit and a must at all our camping trips! Enjoy!
Matt's Shrimp Dip
(Mom3boys)
1 8 oz. cream cheese, softened
1/2 cup mayo
1/4 cup ketchup
1 medium onion, grated
1 Tbs. horseradish
3 dashes Tabasco
1 1/2 pounds shrimp-cooked, shelled, deveined & cut into chunks
Combine all but shrimp. Add shrimp & mix well. Makes about 4 cups. Tastes like a creamy shrimp cocktail!
Bacon Dip
(Mom3boys)
8 oz. cream cheese, softened
1/3 cup picante sauce
6 slices crumbled, cooked bacon
3 green onions, sliced
Combine together & chill or serve.
Mom's Dill Dip
(Mom3boys)
1 8 oz. sour cream
1 cup mayo
1 teas. Beau Monde seasoning
3 Tbs. dry minced onion
3 Tbs. parsley
1 Tbs. dill weed
Combine all, mix well. Serve with fresh veggies or potato chips. Kids love this dip!!!
Sundried Tomato Dip
(Mom3boys)
1/4 cup sundried tomatoes in oil, drained & chopped (about 8 tomatoes)
8 oz. cream cheese, softened
1/2 cup sour cream
1/2 cup mayo
10 dashes Tabasco
1 teas. coarse salt
3/4 teas. pepper
2 green onions, sliced
Combine all but onions in food processor. Pulse till blended. Add onions & pulse twice. Serve at room temp. with crackers. Makes 2 cups.
Hot Mexican Dip
(Mom3boys)
1 8 oz. cream cheese, softened
1 jar Newman's Own pineapple or peach salsa (fruit salsa is a must!)
1 pkg. Mexican blend shredded cheese
Spread soft cream cheese on bottom of pie plate. Top with 1/2 to 3/4 jar of salsa, then cover with shredded cheese. Bake @ 350 till heated.Serve with tortilla chips

Fake Boursin Cheese Ball
(Mom3boys)
2 8oz. cream cheese, softened
1 stick butter or margarine, soft
1 pkg. Good Seasons Italian or Garlic Cheese salad dressing mix-dry
4 Tbs. Parmesan cheese
Mix well & form into 1 large or 2 small balls-(no jokes please!). Roll in chopped nuts (uh uh) or cooked, crumbled bacon. They freeze well!
Deirdre Hall's Shrimp Dip
(Mom3boys)
1 can shrimp
1 stick butter
1 bunch green onions, sliced
dash Worcestershire sauce
8 oz. cream cheese, soft
Mix all in double boiler, or heat in microwave till hot. Serve with crackers. Very rich & good!
Mary's Crab Rounds
(Mom3boys)
1 cup mayo
1/2 cup grated onion
1 cup shredded cheddar
6 drops Tabasco
1/4 teas. curry
1 can crab, drained
Combine together well.
1 1/2 - 2 loaves French bread, cut into 1/2" slices
Spread crab mixture on French bread & keep in fridge till ready to serve. Broil till brown & bubbly.
You may also use English Muffins, cut in 1/4's instead of French bread.
A similar recipe calls for chopped green chilies and jack cheese,(instead of crab, curry & cheddar) plus a stick of butter! Also very good! Both freeze well before baking.
Carmelized Bacon Water Chestnuts
(Mom3boys)
Bacon, edges trimmed, cut in half
1 can whole water chestnuts
Brown sugar
Maple syrup
Preheat oven to 400. Line a 9x13" pan with foil & spray with PAM. Wrap 1/2 slice of bacon around each water chestnut & secure with toothpick. Put in pan. When all chestnuts are done, pour syrup over them and sprinkle with brown sugar. Bake for 20 minutes. Turn & sprinkle with more brown sugar. Bake 20 minutes more. Turn & baste. Bake about 20 more minutes or till bacon is brown. Transfer to serving dish and pour glaze (not grease) over them. Either serve or chill till ready. If chilled, just zap in microwave till hot. Always a hit at parties!

Great Fresh Salsa
(Mom3boys)
4 large homegrown tomatoes, diced
(don't bother in the winter!)
1/4 cup green onions, sliced
1/4 cup cilantro, chopped
1 Tbs. fresh oregano (or 1 teas. dry)
2 cloves garlic, minced
1 teas. minced jalapeno
1 Tbs. olive oil
2 Tbs. fresh lime juice
Salt & pepper to taste
I use my mini chopper to finely chop everything but the tomatoes. Serve with tortilla chips-superb!!!
Beth's Corn Salad
(Mom3boys)
Corn on the cob, cooked and sliced off the cob
Purple onion, diced
1/2 teas. sugar
salt & pepper
Seven Seas Red Wine Vinegar & Oil salad dressing
Optional: red pepper, green pepper & green onion
Toss together & chill. Quantities are to taste, but this is a very good & refreshing & colorful salad!
At BJ's request:
Marinated Tomato Herbed Salad
(Mom3boys)
6 ripe tomatoes (again-homegrown!), cut in wedges
3 sweet peppers (red, green & yellow or orange) sliced or chunked
1 sweet onion, sliced
1 cup pitted black olives
Dressing:
2/3 cup veg. oil
1/4 cup vinegar
1/4 cup fresh parsley, snipped
1/4 cup green onions with tops, snipped
1 teas. salt
1/4 teas. pepper
1 teas. sugar
1/2 teas. dried basil (fresh if possible)!
1/2 teas. dried marjoram (fresh if possible)!
Place vegetables in clear glass serving bowl. Add olives & set aside. Combine dressing ingredients in screw top jar & shake well. Pour over veggies. Cover & refrigerate 3-4 hours. Serves 6. This was a grand prize winner in a magazine & it is excellent! We've made it for years!
Mother's Slaw Dressing
(Mom3boys)
1/3 cup cider vinegar
1/2 cup sugar
1/2 - 3/4 cup Hellman's mayo
salt & pepper
Whisk together & add to slaw. My MIL makes slaw in the blender with water and used this dressing. Very good!!!
Sesame Salad
(Mom3boys)
2 heads romaine lettuce
1/4 cup toasted sesame seeds
4 green onions, sliced
2 cups grated swiss cheese
Dressing:
2/3 cup veg. oil
1/3 cup red wine vinegar
scant 1 Tbs. Cavender's all purpose Greek Seasoning (red & yellow shaker)

I am an idiot-I did it again! Only this time I replied to another post & lost mine!!!
This soup is awesome! Rich & yummy-
Baked Potato Soup
(Mom3boys)
4 large baking potatoes
2/3 cup butter or marg.
2/3 cup flour
6 cups milk
3/4 teas. salt
1/2 teas. pepper
4 green onions, chopped & divided
12 slices bacon, cooked & crumbled, divided
1 1/4 cups (5 ounces) shredded cheddar cheese, divided
1 (8 oz.) sour cream
Wash potatoes and prick several times with fork; bake in a preheated 400 oven 1 hour or until done. Let cool. Cut potatoes in half lengthwise & scoop out pulp.
Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until mixture is thick and bubbly.
Add potato pulp, salt, pepper, 2 tbs. green onions, 1/2 cup bacon and 1 cup cheese. Cook until thoroughly heated; stir in sour cream. Add extra milk, if necessary, for desired thickness. Serve with remaining onion, bacon and cheese as garnish, or pass separately.
Yeild: 10 cups
(I cut it in half for 3 hungry people!)Enjoy!

Savory Spinach Casserole
(Mom3boys)
3 (10 oz) pkg. Frozen chopped spinach
1 (8 oz.) Cream cheese, softened
6 slices bacon, cooked & crumbled
1 cup sour cream
1/4 cup green onions, sliced
2 Tbs. Horseradish
Salt to taste
Dash of lemon juice
Preheat oven to 350. Cook spinach according to pkg. directions in 3 quart saucepan. Drain well & return to pan. Add cream cheese and stir till blended. Add remaining
ingredients and stir until combined. Put mixture in PAM’ed 1 1/2 qt. casserole. Bake at 350 for 20-30 minutes. Serves 8. Yummy!
Potato Vidalia Bake

Red new potatoes, thinly sliced
Vidalia onions, thinly sliced
Butter, melted
Salt & pepper
In a 9x13” PAM’ed casserole, put a layer of potatoes, then onions. Drizzle with butter; sprinkle with s & p. Repeat layers until you run out! Bake, covered at 400
for for 30-40 minutes, or until potatoes are tender. These can be put in a foil pan
and done on the grill with your meat, (IF your spouse/friend is an accomplished
griller!). You may also sprinkle with your favorite fresh or dried herbs. This dish is always a hit!
Ravioli with Tomato Mushroom Cream Sauce (Mom3boys)
1 (1lb.) box frozen (not breaded) meat ravioli
2 Tbs. butter
1 teas. minced fresh garlic
1/4 pound minced mushrooms (I use my mini chopper for garlic & mushrooms)
1 Tbs. flour
1/2 teas. salt
2 cups half & half
3 Tbs. tomato paste
1/4 cup parmesan cheese
Cook ravioli according to pkg. directions. Meanwhile, in 2 quart saucepan, melt butter. Mince mushrooms & garlic in food processor. Add to saucepan; cook until tender over medium high heat. Stir in flour and salt till smooth. Cook & stir 1 minute. Gradually stir in half & half. Whisk in tomato paste. Cook, stirring until sauce boils and thickens. Put ravioli in individual serving bowls; pour sauce over and sprinkle with Parmesan cheese. Sauce may be used over any pasta, but ravioli is really wonderful! Serves about 4. Enjoy!

Lee Bailey’s Charcoal Marinated Chicken Breasts
(Mom3boys)
6 small boneless, skinless chicken breasts, or 3 large ones-cut in half
3 cloves garlic, crushed
1 ½ teas. Salt
½ cup packed brown sugar
3 Tbs. Grainy mustard
¼ cup cider vinegar
Juice of 1 lime
Juice of ½ lemon
3 Tbs. Olive oil
3 Tbs. veg. oil
The day before: In a small bowl, mix garlic, salt, sugar, mustard, vinegar, lemon & lime juices. Whisk in oils. Put chicken in glass dish (or zip bag) and pour marinade
over. Cover & refrigerate overnite; turn in the A.M. Remove chicken from fridge 1 hour before cooking. Grill about 5 minutes per side, or till done. This is excellent for summer dinner parties-always gets rave reviews!
Chicken Santa Fe
(Mom3boys)
8 oz. thin spaghetti
4 chicken breasts, or 1 whole chicken, (if you like dark meat), cooked, skinned and boned
1/2 green pepper, chopped
1 can Rotel (tomatoes & peppers)
1 pound Velveeta
1/2 stick butter
1 onion, chopped
4 oz. mushrooms, sliced
Cook noodles; drain. Melt butter in pasta pot. Saute onions, mushrooms and green pepper till soft. Cube cheese and add to pot. Stir until melted. Add Rotel, mix well. Add chicken and noodles. Can be served now, or made ahead & put in casserole, and baked at 350 for 30 minutes. Also can be made without the chicken. Spicy & delicious!

Fiesta Chicken Enchiladas
(Mom3boys)
3 cups chopped cooked chicken
2 cups shredded Monterey Jack cheese-divided (with jalapeno peppers-optional)
1 cup sour cream
1/2 cup green onions, sliced
Flour tortillas
1 cup taco sauce
Combine chicken, 1 1/2 cups cheese, sour cream & green onions. Mix lightly. Top each tortilla with about 1/3 cup chicken mixture, then roll up. Arrange, seam side down, in PAM'ed baking dish. Top with taco sauce and remaining cheese. Bake at 350 for 30 minutes. Serves 6-8. Easy & yummy!

Hi Ellen,
Wow all of your recipes are fabulous! You've been holding out on us baby! LOL ;) The dips all sound so delicious I can't decide which one to make first, the olive, dill, or sundried tomato?? MMmmm guess I'll have to try them all! That baked potato soup sounds heavenly!!! Can't wait for it too cool off so I can make a big pot. Thanks for sharing all these gems with us, I look forward to seeing more of your faves!
