Recipe: Applesauce Quick Bread

  • Recipe: Applesauce Quick Bread
    I made this over the weekend - really good and it uses all the ingredients you usually have on hand.

    Applesauce Spice Quick Bread

    1 cup sugar
    1 cup unsweetened applesauce
    1/4 cup oil
    2 eggs
    3 tbls milk
    2 cups flour
    1 tsp baking soda
    1 tsp baking powder
    3/4 tsp cinnamon
    1/2 tsp nutmeg
    1/4 tsp salt

    Preheat oven to 350. Spray a 9 x 5 inch loaf pan with pam. In a large bowl, combine sugar, applesauce, oil, eggs and milk with electric beaters until well combined. In a second bowl, combine all dry ingredients and then add to wet mixture; mix well. Spread batter into prepared pan and bake for approx 60 minutes or until wooden toothpick inserted in center comes out clean. Cool 10 minutes on wire rack, loosen sides with knife and remove from pan. Cool and slice.

    i am bumping up this oldie but goodie as I just took a break to have lunch, and I popped this in the oven and remembered I had posted it on here a long time ago!  still make this often and on a cold snowy day, its so good!

    Kathy,  this is so good,  I usually make it in just an 8" square pan.  I still keep this one in my "Kathy" folder.

    Thats funny...I have a Kathy folder too...I've told my kids that these are not MY recipes as my name is Kathyf as well, but I go by yorkie in honor of my little yorkie..
