    I'm having a holiday brunch next week and would like to add hash browns to the menu? Could I fry the hash browns in advance and just zap them in the microwave or do you think they'll get soggy?

    they would probably be soggy.

    I can give you a couple hashbrown recipes with flair to use for a side dish. That you could make in the slowcooker.

    cheesy hash brown potatoes
    2 10 3/4oz. cans cheddar cheese soup
    l l/3 cup buttermilk
    2 Tbsp. butter or margarine melted
    1/2 tsp. seasoned salt
    1/4 tsp. pepper
    2- lb. pkg. frozen cubed hasbrown potatoes
    1/4c grated Parmesan cheese
    l tsp paprika
    combine soup buttermilk butter seasoned salt garlic powder and pepper in slow cooker mix well stir in hash browns sprinkle with parmesan cheese and paprika
    cover cook on low 4 to 4 1/2 hours or until potatoes are tender

    slow cooker cheese potatoes
    2-lb. pkg. frozen hash browns
    10 3/4oz. can cream of potato soup
    10 3/4 oz. can cream of mushroom soup
    8 oz. (2 cups) cheddar cheese shredded
    l cup grated Parmesan cheese
    l pint sour cream
    mix all together in slow cooker cover and cook on low 7 hours.

    au gratin hash brown potatoes
    2 lb pkg frozen has brown potatoes thawed
    l small onion diced
    l stick butter melted
    16 oz. container french onion dip
    16 oz. jar cheez whiz heated
    place hash browns in slow cooker
    combine onion, butter, dip and cheez whiz pour over hash browns mix well. cover cook on low 4-6 hours or high 2-3 hours use the greater number of hours if potatoes are frozen.

    Thanks so much for the help. The first two recipes sound great; Linda, I'd love to see the other one, too.

    I made a potato casserole for the brunch last year but thought it was dry (the recipe didn't come from this bb, of course -- I've only found great ones here). Everyone at the brunch ate it, but I'd like to do better this year.

    This is similar to the rest.

    Texas Potatoes

    1 2lb package frozen hash browns
    1/2 cup melted butter
    1 tsp salt (I omit)
    1/4 tsp pepper
    1/2 cup chopped onion
    1 can cream of chicken soup
    1 16oz carton sour cream
    2 cups grated cheddar cheedar

    Mix together potatoes, butter, salt, pepper, onion, soup, sour cream and cheese.

    Place in crockpot on low; stirring after they start cooking. Keep on warm.

    I just took them out of the oven and had to taste them. Such a wonderful natural potato flavor and I agree you don't need to do anything else with them. I can't wait to serve them to family and friends, a definite keeper! When you said to make more than you think you should, do you mean you doubled the recipe and used a larger pan? Thanks.
    Oh, did you see where I found the Mr. Dell's?

    MY VERY BEST RECIPE. I am ALWAYS asked for the recipe and no one can believe it is so simple. A wonderful company dish because it is so good and easy. Great with any meat or to add to a brunch buffet. Caution...make more than you think you should as this goes FAST. Also good rewarmed the next day. Enjoy

    Nindsy's Best Potato Casserole

    1 24 oz bag Mr. Dell's shredded hash browns
    1 pint (2 cups) whipping cream
    1 teas salt/pepper to taste

    Pour potatoes in buttered 9X13 pan. Pour cream over. Sprinkle on salt and pepper. Bake uncovered at 350 until potaotes are glazey and slightly brown on top, about an hour...experient the first time. Can be made with half and half, but recipe is not the same. You owe it to yourself to make it with cream the first time. You will be tempted to add onion and maybe cheddar cheese on top, but again, I urge you to try it once

    I am not familar with Mr. Dell frozen potatoes. Are they sold in Florida? If not, are there any frozen potatoes that are comparable to them? I was talking about the recipe that LindaChicken posted. It sounds yummy but is the secret that particular brand of potatoes or maybe the cream? What wouldn't be good with that cream? LOL Jan
