    Recently Daubysangel asked for ck. breast recipies-great idea. What about beef? I'm not a great cook(yet) so I dont have any worth mentioning.

    This came from the TOH Country Ground Beef cookbook.

    Salisbury Steak with Mushroom Sauce

    Mushroom Sauce ( I double )

    1 tbls dehydrated minced onion
    3 tbls butter or margarine
    3 tbls flour
    1/8 tsp pepper
    1 can (4oz)mushrooms, liquid drained and reserved
    1 beef bouillon cube
    Water
    1/4 tsp bottled browning sauce

    Salisbury Steak Mixture

    1/3 cup minced onion
    1/3 cup minced green pepper
    1/4 cup chopped celery
    1 garlic clove, minced
    2 Tbls butter or margarine
    1-1/2 lbs ground beef (I use 2 lbs)
    2 Tbls minced chives or green onion tops (I just use what onion I have on hand)
    1/2 tsp dry mustard
    dash paprika
    1 tsp salt (I omit)
    1/2 tsp pepper.

    For sauce, in a small saucepan, melt butter and saute onion until soft. Stir in flour and pepper; blend well. Add mushrooms and bouillon,. Add reserved mushroom liquid and enuf water to make 1-1/4 cups; stir and cook until thickened. Stir in browning sauce. Keep warm while preparing the Salisbury steaks. In a skillet, saute onion, green pepper, celery and garlic in butter over low heat. Remove from heat and add to reamining ingredients; mix well. Shape into 6 patties, about 3/4 inches thick. Fry in skillet until done. Serve with mushroom sauce.

    Hamburger Stroganoff

    1 lb lean ground chuck
    Brown that with some onion. Drain.
    Add 1 can of cream of mushroom soup and a can of drained mushrooms.
    Sprinkle some parsley and basil in.

    Let that simmer for a little while and right before serving add 1 cup of sour cream and heat thru. Do not let it come to a boil.

    Fix 2 cups + of egg noodles and fold them into the meat mixture.

    I combined the Best Ever Meatloaf and the Lil Cheddar Meat Loaf. We really like the combination of the two.

    These both are TOH recipes.

    Best-Ever Cheddar Meat Loaf

    2 eggs
    1 cup milk
    3/4 cup quick-cooking oatmeal
    1/2 cup chopped onion
    1/2 cup shredded carrot
    1 cup shredded mozarella or cheddar cheese ( I have used both, with great results )
    1/2 tsp each, basil, thyme and sage
    a sprinkling of garlic powder
    a sprinkling of salt free seasoning
    a sprinkling of black pepper
    1-1/2 lb lean ground chuck

    Topping:

    1/2 cup ketchup
    1/3 cup brown sugar
    1 tsp prepared mustard

    In a large bowl, beat eggs. Add milk, oatmeal, onions, carrot, cheese and spices and seasoning. Add meat, mix thoroughly.

    Place in loaf pan or whatever you want to use. Bake at 350 degrees for 45 min.

    Combine the topping ingredients: spoon some over meat. Bake for about 30 min. longer or until done*.
    Let stand 10 minutes before serving.
    Use rest of topping to serve over each slice. (If you make the lil loaves, it only takes about 45 min for the full cooking time.)

    *Mine didn't require the last full 30 min. I take it out of the oven when it starts to pull away from the sides of the dish and tests at 170 degrees with a meat thermometer.

    This is our favorite lasagna recipe. Haven't made the traditional recipe since I found this one.

    Mexican Lasagna
    1-1/2 lbs ground beef
    1-1/2 tsp cumin
    1 Tbls chili powder
    1/4 tsp garlic powder
    1/4 tsp red pepper
    1 tsp salt or to taste
    1 tsp black pepper or to taste
    1 can(16oz) diced tomatoes or tomatoes with green chilies (Roi-Tel)
    1 can kidney beans, drained and rinsed
    10 to 12 corn tortillas
    2 cups small cottage cheese
    1 cup Monterey Jack cheese with peppers*
    1 egg

    shredded lettuce
    shredded cheddar cheese
    chopped tomatoes
    chopped onions (your choice)
    sliced black olives
    salsa
    sour cream

    Brown ground beef; drain. Add cumin, chili powder, garlic powder, red pepper, salt, pepper, tomatoes and beans; heat thru. Cover bottom and sides of 13x9x2 in baking dish with tortillas. Pour beef mixture over tortillas; place a layer of tortillas over meat mixture and set aside. Combine cottage cheese, Monterey Jack cheese and egg; pour over totillas. Bake at 350 degrees for 30 minutes. Remove from oven. Sprinkle lettuce, cheese, onions, tomatoes and black olives over top. Serve with salsa and sour cream.

    Note: We sprinkle the cheese, lettuce, etc over each individual serving.

    *If I don't happen to have Monterey Jack Cheese with Jalepenos, I use plain Monterey Jack and dice up some jalepenos in the cottage cheese. Either fresh or canned.

    Italian Beef Au Jus

    3-5 lbs boneless beef roast

    Sauce:
    1 package (10oz) Au Jus Mix
    1 package(.7oz) Italian Salad drssing mix
    1 can (10-1/2oz) beef broth
    1/2 soup can water (I now use diet coke)

    Place roast in slow cooker; combine sauce ing. and poor over roast. Cover; cook on low 8 hrs.

    Shread beef with 2 forks. Serve on steak buns. Use Au Jus for dipping.

    This is good.

    BEEF GOULASH IN WINE

    2 lbs cubed round steak
    red wine
    1 cup chopped onions
    2 cup beef broth
    paprika
    salt
    1 lb sliced mushrooms

    Soak round steak in wine overnight. Saute onions until limp. Add meat
    and seasonings to taste. Stir in beef broth and cook for one hour. Add
    more stock if needed.
    Add mushrooms and cook 30 mins. Add more wine if the mixture becomes too
    dry. Serve with noodles or rice.

    Note: This can be prepared in the crock pot. Marinate steak overnight.
    Place raw onions in bottom of pot, place seasoned meat on top of onions.
    Put mushrooms on top of meat. Pour broth over all and cook on low for 6 - 8 hours or until meat is tender.

    Porcupine Meatballs (Crock Pot)

    2 small cans tomato sauce -- use 1/4 cup for meatballs
    1 pound lean beef
    1 cup instant rice
    1 egg
    1/4 cup chopped onion
    1/2 teaspoon salt
    sauce
    3/4 cup water
    1 16 ounce diced tomatoes
    dash garlic powder
    2 shakes worcestershire sauce
    1 tablespoon sugar


    Make meatballs with first 7 ingredients.

    Shape meatballs and place in crock pot on high for one to two hours. Pour sauce over all and continue to cook on low for 4 hours.

    Make sauce with last 5 ingredients and simmer for 30 minutes

    Ground Beef Rice Skillet
    1 pound ground beef
    1 large onion, chopped
    2 1/2 cups water
    1 cup Uncle Ben's converted rice
    3 beef bouillon cubes, crushed
    1/2 tsp dry mustard
    1 medium green pepper, chopped
    1 medium tomato, chopped
    1 cup shredded Monterey Jack cheese

    Brown beef with onion in 10 inch skillet;drain off fat. Sir in water, rice, crushed bouillon cubes and dry mustard. Bring to boil. Reduce heat, cover and simmer until liquid is absorbed, about 25 minutes. Stir in green pepper and tomato. Sprinkle cheese over top. Cover and remove from heat. Let stand 2 to 3 minutes to melt cheese.
    Makes 4 to 6 servings.

    This recipe is actually from TOH, and it is a favorite of everyone who tries it!

    Italian Roast Beef (French Dip) Sandwiches

    1 Chuck Roast (about 3 pounds)
    1 pkg. "Au Jus" mix-dry
    1 pkg. Italian dressing mix-dry
    1 can beef broth
    1/2 can water

    Spray your crock pot with PAM. Put chuck roast in it.
    Combine all other ingredients and whisk till smooth.
    Pour over roast. Put on lid. Cook on high for 6 hours
    or low for 10-12 hours. Take out beef (it will fall apart), shred
    and cut off fat. Put meat back in juice. Cut chewy French bread
    into sandwich size pieces, and split lengthwise.
    Fill with beef, and use a turkey baster to get beef
    juice from crock pot and pour on bread (grease has risen to the top).
    Eat and enjoy!!!

    Can't remember where I got this one from:

    Chuck Wagon Tortillas

    1 pound lean ground beef
    1 tablespoon garlic
    1 1/2 tablespoons chili powder
    1 1/2 teaspoons cumin
    18 ounces baked beans
    14 1/2 ounces stewed tomatoes
    11 ounces corn
    4 ounces chilies
    1/4 cup barbecue sauce
    4 tortilla -- burrito size
    1 1/2 cups shredded pepperjack

    Cook beef and garlic in large nonstick skillet over med high heat, 4 mins or until no longer pink. Stir in chili powder and cumin. Cook 1 minute longer. Stir in beans, tomatoes, corn, chilies and bbq sauce. Heat 2 to 3 mins then pour into a bowl. Remove skillet from heat, wipe clean. Spray with Pam. Layer 1 tortilla in skillet. Top with 1 1/2c beef mixture, then 1/3c cheese. Repeat 3x, ending with 1/2c cheese. Cover and cook over low heat 15 mins or until cheese melts and stack is hot in the center. Cut in wedges, serve with shredded lettuce, chopped red onion and sour cream.

    I cook these on the stove in the winter. I just put them in a frying pan and put a foil "tent' over them to keep them moist.

    Crunchy Teriyaki Burgers

    1 1/2 pounds ground beef
    1/2cup finely chopped water chestnuts
    1/4 cup soy sauce
    1/4 cup orange juice
    1 clove garlic
    1 teaspoon molasses
    1/8 teaspoon ginger

    Mix together beef and water chestnuts. Form into 6 patties, 3/4" thick. Place in ungreased baking dish. Mix together remaining ingredients, pour over patties. Cover and refrigerate at least 3 hours, turning once. Remove patties and grill 4" from heat, turning once, until done, about 10 to 15 mins. Brush frequently with marinade.
