How do you make creamed carrots?

  • How do you make creamed carrots?
    Hi! My mother in law used to make the best creamed carrots. Unfortunately I never got the recipe
    from her and I cannot find one in any
    recipe book.
    Does anybody have a simple recipe for
    creamed carrots? My husband would
    love to have some today for dinner?

    Creamed carrots
    1 pound carrots
    2 tablespoons butter
    2 tablespoons finely chopped onion
    2 tablespoons flour
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1 tablespoon sugar
    1 1/4 cups milk
    Peel and slice carrots. Cook, covered, in a small amount of water over medium heat until tender. Drain.
    In a medium size skillet, melt butter over medium-high heat. Saute onions in butter until tender. Stir in flour, salt, pepper and sugar; cook for 1 minute. Gradually add milk, stirring constantly until mixture thickens and starts to boil. Pour over cooked carrots and stir to coat.
    Makes 4 to 6 servings.

    1 bag baby peeled carrots
    6 T butter
    6 T flour
    3/4 t. salt
    1/2 t. pepper
    3 cups milk

    Steam carrots until tender. While steaming them, make sauce:

    Melt butter in saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove form heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Careful not to scorch because it is milk based. I like to use my wok pedestal and rest the saucepan on that to prevent burning.

    Drain carrots and stir into sauce, simmer another few minutes and serve.

    (you can also add 1/3 C. of marsala wine while simmering to add a great flavor)

    I had surgery and haven't been on the
    board for quite a while and had
    forgotten how great you all are! My
    husband ask me this morn if I couldn't find some help here and you
    all came through again! Thanks so
